Bury the Berry






I decided to compose the first enrty in this blog using my recent culinary photography. Now, such a venture binds me to post a recipe for these divine cupcakes, doesn't it? Since I think it does, you can find it on the bottom of this page, so crawl down and enjoy!



Berry and Vanilla Shortcrust Pastry Cupcakes:


INGREDIENTS:
- 400 g wheat flour
- 200 g unsalted butter, cut into pieces
- 120 g powdered sugar
- 1 egg yolk
- 1-2 tbs cream
- pinch of salt
- 400 g vanilla cream cheese
- 1 cup berries (blueberries) (3/4- smashed, 1/4- to garnish)
- mint leaves

PREPARATION:
- Combine flour, butter, salt, sugar and egg yolk. Knead the dough thoroughly. Put it into cling form and refrigerate for 30 minutes.
- Roll out the dough, make it not thicker than 1 cm. Place it in the cupcake trays and bake until golden. 
- Make the filling: combine smashed berries with vanilla cream cheese.
- When cooled, fill the pastry cupcakes with the filling, garnish with berries and mint leaves.
